This past year brought something truly special — our best clover honey harvest to date. The honey is light in color, clear, and incredibly smooth, with that soft floral sweetness that makes clover honey a Texas favorite. We don’t get a season like this every year, which makes this batch even more exciting.
Clover honey depends on the perfect mix of weather, soil health, and timing. In 2025, everything aligned. Early in the spring, we had steady rainfall that helped clover plants grow deep roots and full blooms. When the sun came out, fields across North Texas lit up with rich red and white blossoms — just when our bees were ready to forage.
Moderate temperatures made all the difference. Clover thrives in gentle warmth, not in the early heat waves we sometimes see. This spring stayed mild long enough for blossoms to open completely and produce abundant nectar. Morning humidity stayed in the ideal range, helping bees collect nectar easily throughout the day.
Our hives came out of winter strong, with large foraging populations. Because other nectar sources were limited this season, the bees focused heavily on clover blooms. The result was pure, light honey with the unmistakable flavor of fresh clover nectar — delicate, sweet, and silky.
We don’t always get conditions this good. A late freeze, early heat, or too much rain can all shorten the bloom or wash away nectar. Clover needs balance, and nature rarely gives it two years in a row. That’s why this year’s honey is something truly special — a gift from the land and the bees working in harmony.
